Last weekend I created this Blackberry Balsamic and Brie Grilled Cheese and I haven’t stopped thinking about it since. The combination came to me while sampling some local brie at my favorite cheese shop. It’s everything you dream of in a grilled cheese – perfectly golden sourdough wrapped around melty brie cheese with this incredible homemade blackberry balsamic jam that adds the perfect sweet-tangy pop. Every bite is pure comfort food heaven with a fancy twist.

What Makes This Sandwich Special

This isn’t your regular grilled cheese. The magic happens when that creamy brie starts melting into the warm blackberry balsamic jam. The sourdough gets perfectly crispy on the outside while staying tender inside. I love serving this when friends come over for lunch they always ask for the recipe.     • Blackberries: Fresh or frozen work great. I usually grab whatever’s in season but frozen berries make amazing jam too.
    • Balsamic Vinegar: Get the good stuff here it really makes a difference in the final flavor.
    • Double Cream Brie: This is my secret weapon for the perfect melt. Look for a wheel that gives slightly when pressed.
    • Fresh Thyme: Just a few sprigs add such beautiful flavor. I grow mine in a window box.
  • Sourdough Bread: The tang of sourdough makes everything better. I get mine from my local bakery.
  • Butter: Real butter is non-negotiable for that perfect golden crust.

Making That Amazing Jam

Starting Your Jam
The jam is so simple but it makes all the difference. I toss my berries into my favorite copper pot with sugar balsamic and a tiny pinch of salt. Your kitchen will smell incredible as it starts bubbling away.
Getting it Perfect
While it simmers I gently squish the berries with my potato masher. Watch how they break down into this gorgeous purple syrup. The balsamic adds this amazing depth that takes it way beyond regular berry jam.
Cooling Time
Let it cool down and thicken up. I usually make extra because it’s amazing on morning toast too.

Building Your Sandwich

Prepping the Brie
Slice your brie while it’s cold it’s much easier to handle. I aim for quarter-inch slices they melt perfectly.

Butter your bread generously on one side. I mean really generously this is no time to hold back.
The Build
Layer that beautiful brie on your bread and sprinkle some fresh thyme. I love watching the cheese start to soften as the bread gets golden.
Adding the Jam
Spread your cooled jam on the other slice of bread. Don’t be shy with it that jam is liquid gold.
The Final Touch
Once everything’s assembled keep your heat medium-low. Patience is key for that perfect golden crust and melty center.
