Black Forest Cheesecake

Directions

  1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. In a mixing bowl, combine chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then let it cool.
  3. In another large bowl, beat the cream cheese until smooth. Add sugar and vanilla, and mix until well combined.
  4. Add eggs, one at a time, mixing on low speed after each addition. Then, mix in sour cream and heavy cream. Gently fold in 1 cup of cherry pie filling.
  5. Pour the cheesecake filling over the cooled crust. Bake in the preheated oven for 55-60 minutes until the center is set but still slightly jiggly.
  6. Once done, turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour to prevent cracking. Then refrigerate for at least 4 hours, preferably overnight.
  7. Before serving, top the cheesecake with whipped cream, remaining cherry pie filling, and chocolate shavings or cocoa powder for garnish.

Cut the cheesecake into slices and serve it chilled. A generous dollop of whipped cream and a sprinkle of chocolate shavings will make it even more tempting!
