Step 1: Prepare Your Ingredients

Start by preheating your oven to 375°F (190°C). While it heats up, wash your potatoes thoroughly under running water before peeling them with a vegetable peeler. Once peeled, slice them into approximately 1/8-inch thick rounds using either a knife or mandoline slicer for consistency.

Next, slice your onions thinly as well; aim for similar thickness as the potatoes so they cook evenly together during baking. Measure out all other ingredients including heavy cream, cheeses, thyme, and butter so everything is ready when needed.
