Grilled Shishito Peppers

Ingredients

01 Shishito peppers (2 pounds).
02 Olive oil for drizzling.
03 Flaked salt.
04 Fresh lemon (1).
05 Cotija cheese, crumbled (2-3 tablespoons).

Instructions

Step 01

Preheat grill to highest heat setting.

Step 02

Toss peppers with olive oil until well coated.

Step 03

Place on grill pan and cook covered 3-4 minutes.

Step 04

Toss peppers and grill 2-3 minutes more until blistered.

Step 05

Top hot peppers with salt, lemon juice and cotija cheese.
