Slow Cooker Garlic Butter Beef Bites & Potatoes

Tender beef bites and baby potatoes slow-cooked in a rich garlic butter sauce. This hearty and flavorful dish is perfect for a comforting family dinner or a stress-free meal prep recipe.

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sear the beef bites until browned on all sides (about 2-3 minutes per side). Transfer to the slow cooker.
  2. Add baby potatoes to the slow cooker.
  3. In a small bowl, mix melted butter, garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper. Pour the mixture over the beef and potatoes.
  4. Add beef broth to the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and the potatoes are cooked through.
  6. Serve warm, garnished with fresh parsley if desired.

Notes

  • For extra richness, add a splash of heavy cream to the slow cooker during the last 30 minutes of cooking.
  • Swap baby potatoes for sweet potatoes or carrots for a sweeter flavor profile.
