Step 1: Prepare the Ingredients

Start by chopping the tomatoes into small pieces, removing the seeds if you prefer a smoother texture. Crack the eggs into a bowl, add a pinch of salt and pepper, and whisk until the eggs are fully beaten. Set both aside for later use.

Step 2: Stir-Fry the Tomatoes

Heat 1 tablespoon of vegetable oil in a pan or wok over medium heat. Once the oil is hot, add the chopped tomatoes to the pan. Stir the tomatoes occasionally, cooking them until they start to soften and release their juices. This should take around 3 to 5 minutes.
