Recipe Directions

Make The Seitan Wings

  • In a large bowl, whisk together vital wheat gluten, flour, nutritional yeast, onion powder, garlic powder, paprika, and salt.
  • Prepare jackfruit: Drain, rinse, and dry it thoroughly. Remove seeds and hard pieces, aiming for shredded texture.
  • Add jackfruit to the dry mix. Pour in broth and olive oil. Stir until combined. No need to knead.
  • Bring a large pot of water to a boil. Form the dough into small wing shapes. Remember, they expand when cooked.
  • Boil the seitan pieces in simmering water for 30 minutes. Then drain.

Bake

  • Preheat oven to 375°F. Line a baking sheet with parchment.
  • Squeeze excess water from the seitan, insert sugar cane sticks if using, and place them on the baking sheet.
  • Bake for 15 minutes.

Prepare Sauce (While wings bake)

  • Honey Garlic Sauce: Combine all ingredients in a saucepan. Boil, then simmer for 10 minutes until thickened.
  • Buffalo Sauce: Melt vegan butter, add hot sauce, vinegar, and garlic powder. Simmer for 5 minutes.

Finish The Wings

  • Toss baked seitan wings in the sauce of your choice. Return to oven for another 10 minutes.
  • Alternatively, brown in a pan with olive oil, then coat in sauce.

Serve And Store

  • Serve immediately, or keep warm at 250°F until ready. Refrigerate leftovers for up to 4 days. Reheat the air fryer basket for the best results.
