Roasted Garlic Soup

Ingredients

01 1 large cauliflower head, cut in florets.
02 1 whole garlic head.
03 1 medium yellow onion, diced.
04 3 tablespoons olive oil, divided.
05 4 cups vegetable broth.
06 1 cup sharp cheddar cheese, shredded.
07 1/2 teaspoon salt, plus more to taste.
08 Black pepper to taste.
09 For garnish: Green onions.
10 Extra cheddar.
11 Croutons or toasted bread.

Instructions

Step 01

Heat oven to 400°F. Line baking sheet. Toss cauliflower with oil. Wrap garlic in foil with oil.

Step 02

Cook 30-35 minutes. Flip halfway. Until cauliflower browns. Let garlic cool.

Step 03

Heat oil in pot. Sauté onion 5-8 minutes.

Step 04

Combine vegetables, broth. Squeeze in roasted garlic. Blend until smooth.

Step 05

Return to pot. Add cheese. Simmer 10-15 minutes. Add garnishes.
